It’s Good for You
SVTFarm Beef Sirloin Steak Tips are an economical package of meat with robust flavor that’s high in zinc. Pair that with selenium-rich mushrooms from our friend Denise at Overstory Farm, and you’ve got a nutrient-dense dinner that tastes indulgent even though it’s simple and easy.
Gather Together
Ingredients (Serves 4–6):
1 package SVTFarm Beef Sirloin Steak Tips (~1 lb)
1 tbsp bacon fat or olive oil
3 cups sliced mushrooms
1 tbsp butter
2 tbsp flour
½ cup diced onion
¼ cup dry sherry or Worcestershire sauce
¾ cup sour cream
1 cup water or homemade beef broth
Salt, pepper, and chopped fresh parsley
16 oz hot cooked egg noodles
Put It Together
Prep the beef. Trim and slice across the grain into ¼" strips.
Cook the meat. Heat cast iron skillet with oil, season beef with salt + pepper, sauté 2–4 minutes. Set aside and keep warm.
Cook veggies. Add mushrooms + onion to skillet, sauté until lightly caramelized (4–6 minutes). Add to beef.
Make the sauce. Melt butter in the pan, whisk in flour, then slowly add broth. Cook 1 minute until thickened.
Bring it together. Stir in beef + mushroom mixture, sherry or Worcestershire, season to taste, and heat through.
Finish. Remove from heat, stir in sour cream. Toss noodles with parsley.
Serve. Spoon luscious stroganoff over noodles and enjoy.
NOTE: Beef substitutions include Strip Steak, Ground Beef, or Chuck Roast although Sirloin Tips have the most robust flavor.
